Perhaps there is reasoning for eating deer then.  What's hunting season? Killing deer for fun, like Fox hunting?

Depending on the kind of weapon you use, deer hunting season varies.  You can bow hunt from October to Dec 31st I believe, but gun hunting is only allowed for 9 days sometime in the beginning of November.

While some might argue it is only done for fun, part of the reason it is allowed (and regulated) is to maintain a healthy deer population.  Also, you cannot simply shoot a deer, and then just throw it away, per se.  This is referred to as want and waste I believe.  You are required to either process the deer on your own, give the deer to somebody else so they can have the meat, get it processed at a meat market, or donate it at a meat market, etc. (in other words, the final result of shooting the deer is it must be used for meat.  A lot of people will also turn their deer hides in, and in turn will receive a nice pair of working gloves).

So it is a little different.  You cannot simply go around and shoot deer just for the hell of it, as you can with small game (fox, squirrels, rabbits, etc. are considered small game).  Depending on the zone, often times you can only shoot 1 deer per person for the entire season.  There have been times where the population gets high that we have been allowed to shoot up to 5 deer per person (we shot 4 total between 3 people that year I believe).

Regardless, this wouldn't be the reason to justify eating horse, because there isn't a horse overpopulation or anything of the sort.
