We had a horse butcher not far away so my mother bought some horse meat a couple of times. But its not really so special. I prefer the standards birds,cows,pigs. They werent allowed to breed horses for meat so they just got horses with broken legs and similar cases.
I doubt USA starts to breed horses for meat now. Horse meat will be very rare in that case. It will never go mainstream.
