We'll need a new split controller first then, a nunchuck to hold in each hand. How else can you move and turn around quickly and use your hands to cast spells? That would probably be too difficult to do, make gestures while using a thumbstick.
Use 1 nunchuck and only cast with your right hand while you are restricted to 3rd person view with no camera control?
Use 1 nunchuck and headtracking for turning and looking up and down and have your right hand free? Seems annoying to me to constantly have to watch the screen from the corner of your eyes.
Or switch to a fight arena final fantasy style, meaning you have to put down the controller and stand up for each fight and be restricted to dodging and side stepping.
None of these sound very practical to me for a game as long as Skyrim. It will work when you are stationary (shooting spells, bows) but I do quite a bit of moving around while fighting.

Well I play Skyrim to relax. Motion sports/fitness/dance games when I feel like moving around.
Sure I can hold the controller with one hand to use magic then back to two hands but I'm not standing still while casting spells in Skyrim. I play a mage and need to keep my distance and dodge about everything that comes at me with my low health, while casting spells. That's 2 thumbsticks, directional keys to quickly switch between spells, jump button to clear obstacles while dodging and 2 spell buttons. Ergo I do not want to use my hands to cast spells in Skyrim.

I dont know what way the control buttons are set up on consoles, as i've been playing skyrim on pc.
But saying that, wouldnt you have to take your hand off the right analogue stick to press a button anyway?,
if so how would that be any diffrent then lefting your hand and saying a word or something?, other then one action being more intractive then the other?.
Your still not going to be able to turn your head iin game well pressing that button?..
But like i said i could be wrong??.

To jump with the default key assignment yes, you have to move your right thumb off the analogue stick to press triangle. Or you can assign jump to clicking the analogue stick. Your index finger is always on the right hand triggers for spells or shout.
Timing and aiming spells is pretty precise in Skyrim. Saying a word or making a gesture would not work with how the game works currently. 1 pixel off or a fraction too late and your spell might hit a nearby object instead of the enemy.
