Shadowmere is not immortal on Skyrim, just has an insanely high HP regeneration rate. You can put him in a fight against a giant and he'll come out with barely a scratch, but if you do enough damage to kill him in one shot, he'll die permanently.
He's an amazing decoy in expert/master difficulties in some tough dragon battles though
