I don't remember that.... the final race was against a ninja, who became the 6th playable character after you beat him.
There was a weapon that turned opponents into snowmen, and on 1 track there is a giant snowman who shoots at you, but it's just part of the track so you don't race it.
Actually, there isn't a Damien in Snowboard Kids, you must be thinking of Snowboard Kids 2, which for some reason wasn't released in Europe (it was released in Australia though)
