Vitality increases your total HP. Up until 40 you get high increases (20s - 30s per point), after 40 each points nets little gains (10s). 

Strength allows you to equip heavier weaponry and armoury and also gives you higher attack power for weapons that Scale damage with the Strength stat, such as the Club (A), Black Knight Greataxe (B) and so on.

Lolz I meant Dexterity instead of Vitality *facepalm*

Anyway I assume that Dexterity upscales stuff like curved swords, straight swords, bows and other weapons?

And what do you get out of reinforcing shields?
