The linear progress meant you could tackle every world as you saw fit, there wasn't a fixed progression. Sure, in Dark Souls you can also tackle a lot of things as you see, but there are limitations in the form of enemies strengths and lack of items to progress further. 

Plus, in Demon's Souls, there were a lot of builds that made the game rather easy to play. I'm playing a full magician build that can carry a Purple Flame Shield and i'm destroying the game, even considering it's a Pure Black WT event until October 31st. On Dark Souls, every build has it's weaknesses here and there, so you must rely a lot on skills whenever your build fails.
