This is quite true. Classes are only templates that will give you better stats for the type of character you want to have. So if you want to be a Magic wielder, you start with better Intelligence stats if you pick a Sorceror than a Warrior, which starts with far less Intelligence.
Of course, you can always take the Warrior and invest heavily on Intelligence so you will have a hybrid mage that can use heavier equipment than a normal Sorceror. It's all about choices and playstyle, and that's one of the triumphs of the Souls series, you can be pretty much whatever you want to be.
