Sure, it could go to the Wii, but I don't really see the point of that. The reason fans want a remake so bad is to make the game visually stunning. They generally don't want the gameplay or anything else altered very much, they just want the in-game graphics to match (or come close to) the CGI cutscenes.
Remaking the game on the ps3 or 360 (or both) would accomplish this, but remaking it for the Wii wouldn't. The entire point of the Wii is new and innovative gameplay, not awesome graphics, which is the exact opposite of what proponents of a FFVII remake want.
