Hayley Westenra! she does the music on Endless Ocean.
I like that music, not what I would consider buying but it's beautiful music none the less, and fits the game perfectly. Edit... I just read the rest of the OP and you already mentioned she did Endless Ocean. I particularly liked Benedictus.
