I would argue that most of the games you mentioned are shooters of different subtypes.

I would say that Uncharted is more a third-person action/adventure game, since there's an equal amount (at least to me) of shooting elements and exploring/platforming (even if it's linear); some people classify it as a third-person shooter and I can see that. Something similar, like Gears of War, only has a point A to point B approach, with shooting in between.
