If a console port happens which is seeming more and more likely I doubt it would be PS3 exclusive. First off for the reason FJ-Warez listed in order to appeal to a larger userbase. I mean it's the 360 cynics who love to point out how shooter-friendly the 360 lineup is.
Also leo you have your rumors that say the 360 can't handle it at all and yet ATI has stated in the past* that the 360 even though it clearly can't run DX10 is capable of mimicking certain DX10 features. Obviously it can't run DX10, neither console can as it is a question of hardware not software. But if even certain functionality is present porting to the 360 could not only be possible, the 360 could even take advantage of some of the advanced features Crysis has with DX10 on Vista. It'll have to be toned down extremely from the PC version just like the PS3 if they want it to run smooth but it could be worth considering for Crytek if they want to recoup more money than they can by just selling their engine.
