According to GiantBomb, From is developing the PS3 version with Namco porting the game to 360. Kinda like Bayonetta in reverse (though probably not as bad).
I'd assume that's why the game is ps3 exclusive in Japan, where From is publishing the game themselves.
Though I'd take that claim with a grain of salt, given GiantBomb's game information pages function as a wiki, and thus can be edited rather easily.

this is just my opinion, but i think the 360 Version will do fine, since Namco is surely expecting high sales for the 360 version in NA, and wouldnt want to screw up. and in addition, Dark Souls simply doesnt look like a game that'd be hard to handle for 360 to begin with, let alone PS3. Demon's Souls Performance wasnt a 100% stable, but this was back when it wasnt much of a budget filled development, since we're talking about From Software here. (could it be that the name 'From Software' is pretty dumb in terms of making sense? xD jus' asking, but i am not a native speaker, and even to me, it sounds kinda weird.) .. one of my favourite developer's though, its a bit off-topic, but i love Armored Core 4 and 4 Answer, and they simply do their thing, they dont westernize their stuff to make more money overseas, they are just doin' their stuff like they always did, and i think Demons/Dark Souls was definetly influenced by Kings Field, at least in terms of setting and athmosphere.
