Would PS3-360 have been better off if they had 1-2 gig of cheaper DDR2 ram rather than what they ended up with

No. The games needs memory with more speed (GDDR) than low latency (DDR)... graphics needs that.

The confunsion in this topic is the DDR2/DDR3 memory is not the same kind of GDDR3 used for graphics... just low end video cards like NVIDIA GT 520 uses DDR2/DDR3 for memory.
