Ha I just did the same thing

I had a Japanese import 40gb phat which I upgraded the HD to 500GB and was using as my main console had another 80GB phat which was a netflix machine in another room retired. My import PS3 started freezing on me I think a three hour Bayonetta session cooked it. This happened acouple months ago. So I had to pull my 80 GB out of retirement.

I just traded it in last night to gamestop using special get $125 for it if trading towards a slim. I put the 500 GB HD in my new slim before I even turned it on the first time.

Acouple things I learned from swapping HD's and backing up data.

1. Some things do get lost it seems like some games save files Vanquish and Bayonetta come to mind. Weren't backed up automatically.

2 Little Big planet games have an in game option to create a save file to back it up. I lost all my costumes and stuff once, This time it was backed up.

3. The first time you trophy sync with you new machine it will take awhile if you have a lot of trophies. Also I know trophies are stored online but I lost my Bayonetta tropies dont know how thats possible but they are gone lucky I didnt plat the game or anything.

4. You will have to go into the PS Store and go to your download list and redownload all DLC and PSN games you already bought.

yeah dont know if this is still a problem but when I changed mine I had to phone sony to ask them to reset my my videos so that I could redownload them.  they done it no problem, and sent an email of appologysing, that I didn't think was needed but thought it was nice of them to send anyway. I know things from the normal playstation store can be downloaded 5 times but it seems the video store works differently.

correct me if I am wrong
stop me if I am bias
I love a good civilised debate (but only if we can learn something).
