Warhawk is my favorite shooter by far (and I own a 360 too).
After that, Uncharted is great and so is Resistance.
As far as what is coming out--buy one. Major software coming...

Others that look great:
Wardevil, Eight Days, The Getaway, Team ICO project should be great (maybe Shadows of the Colossus 2?), White Knight Story......So many good games coming out, that my 360 will probably be collecting some dust in 2008 unlike 2007.
