Thats right after all you can get aids through semen. Sperm consist mainly of water hormones and semen itsel it contains proteins but very few. Ofcourse you can be allergic to some stuff in it but its rare. Sure if he has not good hygene there could be an infection but so fast acting that she could say it was because of the water ? Unlikely. The certainty she had it was coming from the water says a lot it was an immediate effect which rules a lot of things out. Intolerance to sperm is possible the better expla enatilon but even better is the explanation she didnt like the consistency of the water and the thought of drinking something weird made her sick, That she send the second bottle to analysis could mean she was already suspicious after drinking the first one that someone put something gross into her water.

Just because she felt certain that it was the water that caused her illness and not somthing else doesn't necessarily mean it was an immediate effect. For instance, she could have been on a deadline and not had time to eat anything. The water from the water bottle might have been the only thing that she consumed over the space of 4-6 hrs, which would have allowed to her to quite easily pinpoint the water as the source of her illness.

And as for fast facting infections...entirely possible. Food poisoning is due to microbial life and may set in as quickly as 2 hours after consumption. Although most organisms are killed in the stomache, the anaerobic environment and high acidity are, for some organisms, at the optimum levels for their maximum reproductive rate. If he had some sort of anaerobes that managed to get mixed in the semen, or even facultative anaerobes, the effects can be quite rapid...rapid enough for her to finger the water.
