'any' would still be more appropriate than 'one'.
Honestly, I'm not too sure either. I just know plural antecedent = plural pronoun & singular antecedent = singular pronoun. That'a basic rule in the English language. The sentence you used may just be a common case where a sentence sounds fine, but isn't.
When you say the sentence again, this time using 'any', then the sentence sounds better IMO.
