Judging from Deadliest Warrior, the Vikings. They were neck and neck between the Samurai, who were also armored, and won about the same number of battles with their short range and mid range weapons. The Shaolin won against the Maori because of the ineffective Stingray Spear, but they were outclassed in short range and midrange. Armor makes a whole lot of difference, and I believe the Shaolin would not be able to defeat the Viking where it mattered: short to midrange combat. If it were an unarmored fight the Shaolin monks would do well, but the between two the Vikings would win.
