EDIT: Not to mention, media influences are also factors in rising alcohol consumption. Also, the strength of the industry now also plays a big role.

Alcohol consumption is increasing relative to what? A few decades ago? The 20th century was possibly the most teetotal in Western history.

We're reverting to normality after an unusually dry period. That's all.
