They are specifically told by their bank to never let their credit card out of their sight.

The first time my mum came to see me to the US and paid for lunch in a restaurant I had to have a 5 minute chat with her to convince her that it was ok to give her card to the waiter...

It is an easy way to do it too, if you're discrete about how you swipe the card and how you use the info you've swiped (like, say, pay for small online purchases across a multitude of cards, a book here, a DVD there) that people are less likely to notice
