People say "Bless you" when you sneeze because when you sneeze, your heart stops for a millisecond.

There is no historical reason why we say 'Bless You', I highly doubt when the phrase first appeared, people knew the human heart stops for a small time, if anything it's probably to do with religion.

It was a common belief that when you sneezed the Devil had a window to get into your soul, so saying "God bless you" kept the person sneezing safe.
