The ESRB, or Entertainment Software Rating Board, is a self-regulatory body which categorizes games for the North American market according to their content. For instance, strong sexual content or graphic violence will usually result in a game being rated as M, for Mature. It's very similar to how movies are rated G, PG, R, etc.
