The demo they showed at TGS seemed completely bug free to my eyes. Assassin's Creed looked buggy at E3 and it came out only about 3 or 4 months later.

You saw a predetermined path through the game played by a Konami employee (who obviously knows the serious bugs and avoids them). What if Snake broke his cover while touching the statue's penis? What if Snake ran into a wall? What if Snake shoots one of his own? What if you throw a grenade in your own feet? Bug testing phase can be pretty large, especially in such a heavy-budget title from such a perfectionist as Kojima is.

Also, comparing a mediocre to good at best game (in my eyes at least - too repetitive) and Konami to Ubisoft is a bit stupid. They'll delay the game once more in order to polish it to perfection (then there's the Xbox360 version as well :D )
