I know it's been like this in almost every MK but, everyone having the same normal attacks in the air, along with all crouched attacks also pretty much doing the same thing doesn't sound very exciting. I'm worried about the characters not feeling "unique" compared to eachother. It won't be as bas as Crapcom putting multiple shoto clones in one game but still worries me just a little.

That video is from a demo build which is months old and its probably against easy difficulty AI or something. Mileena could easily duck under cage, and sweep him and follow up with a teleport kick or something.

I don't think you have to worry about characters not feeling unique. NRS have made conscious efforts to balance the game, and give each character some individuality. The punches and kicks of Sub-Zero and Mileena feel different in the demo.

Sub-Zero feels kinda slow, but big hitting and Scorpion is considerably faster, yet his combos do less damage from what I've played. There are differences in how each character plays.

While the basic attacks do pretty much the same thing, each character has their own mini-specials. They are combo moves that incorporate each character's ability into attacks. Scorpion has these series of kicks that ends with a fiery backflip kick, and sub-zero can punch you a twice and the third punch will freeze you in mid air (for a much shorter time than a normal freeze move). There are definite subtle variations like that in the game.
