Any PS3 teardown video will have this.
You can use your fingernail to pop the plastic HDD cover off. Use a PH-OO or equivalent Phillips tip screwdriver to remove the single blue machine screw holding the HDD caddy in place, taking care not to strip the head, which is made out of a softer alloy than steel. Flip the wire caddy handle up and slide the caddy to the right until it pops free of the SATA connector. Remove the four side mounted Phillips screws holding the drive in place and the HDD is free from the caddy. Reverse the disassembly order with the new HDD to reassemble.
