Either the PS3 demo was a much older version of the game compared to the X360 demo or Crytek really failed big time. 2-3 years ago is wasn't uncommon for multiplatform games to look better on 360 but today most look identical with differences being at most negligible. And with the likes of Uncharted 2, Killzone 2/3 and God of War 3 if Crytek can't do any better on PS3 why even bother. In any case they are no longer the king of graphics like they used to be no matter what version we look at.
Still its worth waiting for a comparison with the final retail version.
