I have not much time to play, so I'm not a platinum hunter. I only have 2 platinums R&C: ACiT and Uncharted: DF. I wanted to get at least 1 platinuim to satisfy myself that I can do it and I really liked both games. I'll probably get the Uncharted 2 platinum because I only have to play through on Crushing to get it, which I'll do at some point.
But mostly with any game I like well enough to get to the end of the story mode I like to get at least one gold trophy (2 if finishing the game gets a gold trophy by default). If I get a gold then I feel like I've played a reasonable amount of the game to be able to say that I've experienced the best the game has to offer.
Platinuming often involves a lot of graft and tedium and I can't be bothered trying to do that too often.
I wish I could platinum Demon's Souls, but I don't know that I'm good enough. I've finished one playthrough, but I don't know whether I've got what it takes to get all the trophies.
I'll also never platinum a game that requires substantial competetive multiplayer. I just can't get into competitive MP.
