?You can forget about them orchestrating the music for this because a). it's a port, and b). they wouldn't allocate that level of resources to a port or a handheld game.
We'll NEVER have a fully orchestrated Zelda game, because Kondo loves interactive music so much. But, they have been able to make use of great programming techniques to segue between orchestra and MIDI tracks. So expect a good amount of orchestral tracks in Skyward Sword, but an even greater amount of MIDI tracks. I feel confident they MIDI pieces will sound convincing after listening to Twilight Princess' score - which made use of great samples.
