More than enough, but I'd get it just for the 'insurance' so to speak [if you want to upgrade even more later]
The fact that you're running two 25" is probably another reason to get that powersupply. I'd say take it.
And as for the whole "NVidia vs ATI" war, stick with what you want/need. Usually the driver problems can be solved by doing a bit of digging online. I fixed my 5770's problems with a few hours worth of digging online until I found a little forum post with a little link in the 4th page of Google leading me to a download file for the hotfix for the Graphics Driver [my card would sometimes show streaks of colors on the screen, and I'd have to hard restart my computer]
