Not really. There's a little bit in the beginning (where Conker is even told that the developers thought that if they change the beginning, people might believe it's a new game) and a few unexplained switches (like some profanity being edited) but aside from that, it seems almost exactly the same. I think Rare just took the opportunity to take a great pre-existing game and just give it the best graphics possible at the time.
Rare used to always have a talent for graphics. Their N64 titles were among the best looking for the console. I always felt Starfox Adventures was one of--if not THE best looking Gamecube game. They brought their talent with them when the updated this game. I miss the old Rare so much.
