I fought phalanx in NG and omg I almost died, the difficulty was not very severe it was just something I didn't expect. But with my experience and some items, I won without using fire. I didn't have any item with fire at that time, I underestimated that guy and almost paid for it.
I stopped playing after because I got bored.
King Allant was easy, I helped a stranger defeat him, and I also defeated him on my own. Don't understand why people consider him difficult. Maneater was 10x more difficult. Maneater was the only demon in the game that's cheap and unfair, everything else is fair and amazing. I tried defeating maneater on my own it was just impossible. Had to get co-op partner for it. The partner died while helping me ;-(
