Different strokes I guess. Personally I found Galaxy 1/2 and DKCR so insanely much better than their predecessors that I have a hard time taking anyone who really feels otherwise that seriously. Then again, I've actually replayed M64 and DKC1-3 multiple times since the 1990s (and actually I've replayed them all on Wii even), so maybe I'm coming from a different source for comparison.
