I am satisfied with the HD consoles graphics. Games like Mass Effect where the gameplay looks just as good as the cutscenes only not zoomed in with whatever face you give it is awesome. I'm blown away by the graphics in the game trailers, but not the games themselves.
You have to keep in mind that while PC's get hardware upgrades all the time (hence better graphics), consoles are expected to last many many years with what they've got, which is a difficult and expensive task to take on. And gaming companies couldn't max out their graphics since no one would be able to play them now, not that it's easy for them to do that either (too time consuming, and their time is better spent on story and gameplay).
The Wii's graphics suck though... it seems closer to N64 than an HD console. But that's why I didn't buy one, so whatever.
The real question is, will we be blown away or satisfied with the next gen's graphics? That remains to be seen.
BOOM! FACE KICK!
