Trinidad - Black Pudding, which sounds similar to the Blood sausage mentioned here. It's pig's blood wrapped in intestine and it tastes really good TBH (with plenty pepper).
Patchounie, which is basically goat guts. I don't eat it but it's pretty popular.
Cow tongue, manicou, rabbit, tattoo (armadillo).
