Well for the 360, they've had quite a few colors.(though most were special editions) Originally white, then the Elite Black. They had the Green Halo 3 one, the Red RE5 one. The Black w/design on it for COD: MW2. Now they have the Glossy Black (250gb S) and the Matte Black (4gb S). There is also the Silver Halo Reach 360S.
Before with the phat PS3 in Japan they had Black/White/Silver as standard colors available, (gunmetal gray MGS4 Limited Edition). Then they had the Black Slim, then White FF13 Limited Edition PS3. Now they have the White PS3 and there was the GT5 Blue Limited Edition model.
For 360's you can get them pretty much worldwide. For PS3 colors you'll definitely have to import one.
I like the different colors myself, which is why I got a White FF13 PS3 and just recently bought a Halo Reach 360S. 
I'd like to get a Red Wii as well, but I'd have no way to transfer my VC/WW games to it...
