Add a "Boss select mode" where you can select a boss fight and fight the boss in the same location it would be at in the main story (not in some sort of special arena). I don't like having to clear a whole level just to get to the boss fight I want to play.
Don't make save files copy protected on the PS3 version :S
Add a mode 10 times harder than non-stop infinite climax.
Add a "Theater mode" where you can select whatever cutscene you want from the game and watch it.
Add a few more playable characters besides Jeanne and Zero... but let us play as them as if they were Customes, not start a whole new game to play as them :P
Add more secret boss fights.
Add some sort of "Challenge mode" where, for example, you have to fight all bosses from the game without getting hit once and in a time limit or something like that.
Improve the performance of the PS3 version, LOL.
Don't forget to add the "awesome" boss fight (example: Bayonetta vs Jeanne, Dante vs Vergil, Dante vs Nero, Gene vs Azel... you get the point... some boss that has a simillar fight style/abilities the main character has). If there's no Jeanne in this one then just get another Umbra witch to replace her :P
I don't know about the gameplay mechanics... I think it's fine as it is.
