Well, Skid Recovery is the option that came to substitute the old Standard/Professional physics toggle in GT5:P
If you want a more realistic approach, Skid Recovery Force, ASM and TCS should all be OFF. Manual is also a requirement and you would also want to switch ABS off, though this would be the hardest thing to control in a car, if you use only a pad.
