As long as its 2.1 or better, your good. I would note that you can root your phone to get the updates in unofficial areas as needed.

The biggest and most important changes were made from 1.5 to 1.6, then from 1.6 to 2.1. 2.2 is great (my phone got the upgrade a few days back), but its not something earth-shattering that would give you an inferior product if you couldn't have it.

The most important aspect, IMO, is to get a good phone...Regardless of the OS behind it. Anything around the 1ghz range like a Nexus One is going to run fast, and play most games.
