From what I've played of PS3 exclusives I'd have to say the ones I find myself wanting to go back to are Killzone 2, Resistance 2 Coop, and Valkyria Chronicles. I know you don't like shooters but Resistance 2 coop feels like a mix of RPG and FPS.. I'd put it between Fallout 3 and Borderlands.
Uncharted and Uncharted 2 are great single player experiences 2 times through each but after that I haven't had any inclination to go play it again.
Also LBP and Modnation Racers as well as the R&C games seem to be right up your alley from your Wii collection. I hope if/when you get a PS3 you enjoy it! =) It's a great system.
