I'm relatively new to anime, but series wise I would say Neon Genesis Evangelion is the best. As for films, I would say either Grave of the Fireflies or Akira (the manga's better though).
I've only just ordered season 1 part 1 of FMA on ebay UK, it's sold out pretty much everywhere online.
