There were no sith when he was in his prime, though. The Sith went "extinct" as far as anybody knew around 1,000 years before A New Hope, so Yoda post-dates that by about 100
The problem, like others have said, is that everything's been done. They have stories set about 140 years after the original trilogy, they have stories set up to 5,000 years before it (handily predating Kotor, for instance), and have fleshed out that entire timeline in between
He would have to go well into the future, say "screw you guys" to the expanded universe authors and overwrite what they've done, or merely do an adaptation of what they've done
