Well, obviously the games I am currently playing
I play and complete the main story of all the games I own. The following games still have side quests and the like unfinished:
Dragon Quest IX - only 72% of the optional quests and 61% of the alchemy
Super Paper Mario - haven't finished all the recipes
Timesplitters 2 - Haven't got platinum on all of arcade/challenge mode
All Advance Wars games - Haven't got 'S' on every stage
Final Fantasy XII - still some optional bosses left
