Simple answer? Because you don't know when the game is coming. You don't know how long it's delayed - you could end up cancelling the preorder, and paying for another game - only to find out that GT5 is coming a week later.

Then you're screwed - you just spent the money on something else.

Always better to play it safe and try to wait for an official announcement when it comes to things like this - if they say it isn't coming for another month or so, then you'd be clear to take the money and get something else, and wait until later. If nothing gets said, either, then you're probably clear to do the same. But rushing a decision like that could end up leaving you burned.

You can always buy the game later, people know that they have at least a week to save for the game, it can easily become a month, playing safe will be using the money on a game that you actually know its coming out, not waiting for an elusive release date. So what if you have to wait 3 more weeks to get the game you will have it eventually, and if it doesn't come out soon you are not tied to a preorder. Its a win-win situation.
