Dunno, but there are a few way to implement that, they could do it like the old burnout demo, where you move your foot forward to accelerate, and back to deccelerate/stop, or they could do a modified Joyride where you push your hands out to accelerate, and pull them back to deccelerate/stop.

If you watch the video though his hands don't really move in conjunction with the varying speeds.

And it doesn't look like he's moving himself around that much either so it doesn't look like he's doing it with his legs/feet.

Well he never stopped moving so it probably was the leg thing, just look at the burnout demo, all you have to do is put your foot forward and steer.
