Demon Soul's
Wipeout HD HD Fury it's not really like GT5, but if you don't like racing games in general no. It has weapons and eliminator mode... though the online multiplayer is pretty dead :-/
The top two are easily my favorite 2 ps3 exclusives

Valkyria Chronicles
MGS4 (not my favorite metal gear, but good nonethe less)
Uncharted's Good but I'd say rent it... especially the first one.
