Errm you can actully use your PS2 Dualshock with a converter, but i would recommend getting a new one anyway, theres an update from Sony that disables all 3rd party devices via the USB ports, so i'm not sure if the converter will work anymore - not sure. and when i was trying to use my PS2 controller the R2 button would register my actions in a game, so i would advise just getting a new one.
and i recommend Heavy Rain, and if your into hardcore games Demon's Souls, but the sugesstions about Uncharted and God of War are equally good choice. although imo GOW3 is just amazing, and probabily even better when you play GOW1&2 in HD on the PS3. if your into shooters then theres loads, but the one i'm looking foward to is Vanquish which is in lead development for the PS3 coming out next month, looks cool.
