Easy it could work something like this.  Controller would be used for alot of the shooting elements and overall control but voice would play an integral part as well.  While flying you could use voice commands to tell your dragon to support certain actions or target other things as well as give commands to allies if there are some around.  Then while in between battles you would use all Kinect to interact with your dragon by feeding it, touching it, training it, etc.

However the more I think about it the more convinced I am that this will be just fully Kinect with no controller but we'll see.
