I just voted for General RAAM. RAAM took me back to the 1990s where boss battles meant something and were harder than hell and impossible on higher difficulties.
Sephiroth...eh, Kefka is the best villain in the Final Fantasy series. Poisoning the water supply for Cyan's entire town killing Cyan's family is a lot more dastardly than driving a sword through Aeris.
