IMO Uncharted 2 has the best overall experience graphically speaking...
here goes my breakdown:
Textures, they're just awesome, God Of War 3 has some better textures technically, but the design and the ability of ND to blend the textures and make it look like there's not a single texture repeated it's just amazing...i'll give this point to U2.
Lighting, GoW3 Wins this one, again, technically, BUT! the U2 Lighting it's pretty much nailed in realism...yet, i've to give this point to GoW3 since the amount of light sources and how they react to everything in the scene it's much better than U2's one.
Post-Processing, without a doubt U2, the DOF used in U2 is GODLY, it's the best use of DOF i've ever seen in my entire life...you DON'T notice that it's there, but it is, and makes you focus on the scene so well..in GoW3 there's not much PP besides the OBMotionBlur which is really good too, but visually, the most present effect of both it's the DOF.
Polygons, overall, i think U2 has more polygons than GoW3, the environment and the character models in U2 seemed to be more consistant in quality.
Particles, this one is really close, U2 has really good explosions, really good Water, really good Snow, The best Rain i've seen (it's not a 2D texture), where GoW3 has really good explosions, the water looks realistic but don't react to anything, there's no snow, but there's ashes! which are the same as the snow in U2, the rain is good but not great...overall again U2 takes the my vote.
Now this is my opinion, but when you think that U2 is running at 30fps with V-Sync and Triple-Buffering and GoW3 running at 30-60fps at 720 with the scale (U2 is amazing is scale too sometimes like in Shambala) and amount of things happening on screen, IF GoW3 would be running at 30fps locked, then sure it'd look better than U2.
Anyways, with GT5 and Kz3 coming out in less than 5 months, i can't see any of them holding the crown for much longer.
